What does that mean, you ask?  Since I was little, I never liked meat.   The smell and texture completely grossed me out.  I frowned at my mother’s spaghetti with meat sauce and baked chicken dinners.  She forced protein shakes down my throat to ensure I was getting enough nutrients.  Let me be clear, I’m not a vegan/veggie snob.  If you’re a carnivore, have at it!  It’s just not for me.   I often get asked what I eat so here ya go:

Carbs are my friend…I have this thing for sweet potatoes…and fries…and sweet potatoe fries.  Yes, fries.  I confess.  Phew.

But seriously, I do my best to eat a plant based, whole foods diet.  Lentils, fruits, veggies – basically, I shop around the outer perimeter of the grocery store limiting processed foods and dairy.   That being said, I like frozen pizza and doughnuts just as much as the next gal.   I’m not crazy.  On work days, I typically have oatmeal with almond butter and blueberries for breakfast.  And coffee….lots of coffee.

Snacks/lunch is always something quick:  Larabar makes a yummy food bar that is Vegan with only a few ingredients so you know what you’re eating.  https://www.larabar.com/

I also get vegan protein/fruit smoothies at work that fill me up.

Since I STRUGGLE in the kitchen (some of you make it look so easy!) I keep dinner simple.  Salads with lentils and goddess dressing, nuts, and any veggie in the fridge.  Trader Joe’s brand  Goddess dressing is vegan.   http://www.traderjoes.com/fearless-flyer/article/1221

I make a decent black bean and squash tacos.  I steam squash, heat up black beans, add tomato, onion, lettuce, avocado, salsa in taco shells and BOOM!  Dinner!

Here’s a list of staples I buy at the grocery store:

Almond milk, raw nuts of any kind, any kind of potato, avocados, any veggie, any fruit, dried fruit, sprouted breads/bagels/english muffins, lentil beans, almond butter/peanut butter/jelly, hummus, coconut milk chocolate ice cream, snack foods: pretzels, popcorn & dark chocolate, whole wheat pasta & sauce, and frozen pizza   I buy pizza with and without cheese because I do have a small child that is VERY PICKY.  He survives on air and crackers…crazy.
